Avocado Gelato


Avacado Gelato

This is a rich, creamy desert with a tart & tangy flavour and has lovely green colour.  Not at all what you would expect.  Very refreshing on a hot day.          

Ingredients:  
  • 250gm ripe avocados (approx 2 fruit)
  • 250gm natural yoghurt
  • 1/2 cup lemon juice (approx 2-3 lemons)
  • 150g caster sugar  

Instructions:

Remove flesh from avocado and with sugar, place in food processor and process until smooth.  Add yoghurt and lemon juice.  Pulse until blended. Freeze in container, stirring twice during freezing. Remove from freezer approx 5 minutes before serving to soften slightly.

Makes 500ml
