Muesli


Crunchy Caramel Cookies 

This recipe makes over 40 cookies depending on the size.

Ingredients:  
  • 250gm butter
  • 2 small cups sugar
  • 1 egg
  • 1 tablespoon golden syrup
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 2 cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 cups cornflakes
  • pinch of salt
  
Instructions:

Cream butter and sugar together until light and creamy.  Add egg, golden syrup and vanilla then dry ingredients.  Place desertspoon lots on a baking tray lined with baking paper and bake 15-20minutes at 180C.  
(If you do not wish to make this quantity, halve the ingredients.  To halve the egg, break into a cup and whisk then use halve of the mixture)
