Cup Cakes
This is an adaptation of a recipe given to me many years ago
by an old friend.
Ingredients:
- 200gm butter
- 1 cup sugar
- 3 eggs
- 2 cups self raising flour
- 1 tsp vanilla
- 1 cup milk (approx)
- ½ cup sultanas (optional)
Instructions:
Line 24 muffin
tins with paper cases.
In a food processor or cake mixer,
beat butter and sugar until light and fluffy.
Add eggs and
vanilla and mix to combine.
Add half the milk, then flour
and more milk as necessary to give a rich creamy texture.
Bake 10-15minutes at 180 degrees C.
Cool then ice with
your favourite icing.
Icing Suggestions:
- Finely grated lemon zest and juice of a lemon
- Finely grated zest and juice of half an orange
- Raspberry flavouring and pink colouring
- Chocolate and peppermint
