Nana's Sultana Cake

This recipe was given to me by both my mother and mother-in-law – they have both used it for years so it is a well proven recipe.    

Ingredients:
  • 500 gm sultanas
  • 1 cup water (approx)
  • 250gm butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp almond essence

Instructions:

Grease and line a 20-23cm square tin.
Put sultanas into large pot and just cover with water. 
Bring to boil and boil 8 minutes or until water has evaporated.
Cut butter into cubes and mix with hot sultanas.  Cool.
Beat sugar and eggs together and add to cooled mixture. 
Add rest of ingredients and place baking tin. 
Cook 160 for approx 1 ½ hrs.  Check after an hour. 
Cool in tin.
